MITCHELL, SD (Mitchell Now) — Multiple Subway locations in Mitchell are under new ownership, marking the end of nearly a decade of operation by a local family.
Scott Giblin and his brother, Eric, purchased the Mitchell Subway restaurants in 2016 from their parents, Ken and Mary Jane Giblin, who originally established the business in 1997. The family’s involvement with Subway in the region spans nearly three decades.
The business began with a single location in Sanborn and another at the I-90 Truck Stop before expanding into Walmart. In 2014, a new, larger location was constructed on Sanborn Boulevard, doubling seating capacity and introducing what was described as the first drive-thru of its kind for Subway in South Dakota.
Over time, the family expanded operations to include additional locations in Chamberlain and Parkston. After taking ownership, Scott and Eric sold the Chamberlain store and later opened a new location in Volga. At its peak, the family operated four locations—two in Mitchell, one in Parkston, and one in Volga.
The Mitchell Subway locations have now been sold to Karl Larsen, a multi-unit franchise owner with experience operating several Subway restaurants.
The transition represents a shift in local ownership while continuing the presence of the nationally recognized sandwich chain in Mitchell.
